Rakfisk, among several other foods, is served on ‘lefse’. ‘Lefse’ is a flatbread (usually square) baked with flour, potatoes, butter and milk, and cooked on a flat griddle. A similar product is ‘lompe’, which is round, and that we wrap around our hot dog sausages our spread with brown cheese, butter and sugar or other different spreads. ‘Lefse’ can be found in Norwegian-ethnic regions of the US, whereas ‘lompe’ is not even used in all of Norway.
